Overview
Every day, the boat's crew prepare the most delicious dishes for the hungry diving guests in the small ship's galley. Everything is lovingly prepared daily from fresh ingredients. Rumours go round that one or two of them only came on the boat in the first place because of the delicious lunch Diving started.
Here is a selection of the delicious dishes served in buffet style on our boats every lunchtime:
Recipes from our boat crews
Chicken pasta bake
Ingredients:
Pasta (penne or fusilli)
Milk
Eggs
Butter
Grated cheese
Chicken breast
Onion
Green peppers
Cut the chicken breast into small pieces, and chop the peppers and onions as well. Parboil the pasta (al dente). Fry the chicken breast with the onions and peppers over a high heat, then mix with the parboiled pasta. Mix the milk, eggs and butter to make a sauce and season well with salt and pepper. Now put the mixed pasta into a casserole dish and pour the sauce evenly over it, sprinkle with the grated cheese and put in the oven.
After about 30 minutes the bake is ready!
Seafood platter
Ingredients:
Various fresh fish fillets
Flour, dried breadcrumbs and egg for the coating
Tomatoes
Onions
Paprika
Wash the fish fillet and pat it dry with kitchen roll.
Prepare a plate of flour, a plate of dried breadcrumbs and a plate of beaten egg (the egg can be seasoned beforehand if desired). Coat the fish fillet first in the flour, then in the egg and finally in the breadcrumbs. Heat oil in the frying pan and fry the breaded fish fillets until golden brown.
Fish shawarma
Ingredients:
2 organic lemons
1/2 tsp ground cloves, turmeric and allspice
1 tsp ground cinnamon, cardamom and coriander
Fish fillet or sardines (gutted)
Peppers, tomatoes, onions
Oil
2 cloves of garlic
For the shawarma, wash the lemons in hot water, dry them and grate the zest. Juice the lemons. Mix the cloves, turmeric, allspice, cinnamon, cardamom, coriander and 1/2 tsp pepper. Stir in the lemon zest and half the juice. Wash the fish, pat dry and mix well with the marinade. Cover and refrigerate for about 1 hour. Briefly fry the onions with the peppers, tomatoes and garlic, season with salt and pepper to taste and then set aside. Heat oil in the pan and fry the fish, then cut into pieces and mix with the pepper and tomato blend.
Fish shawarma naturally goes well with rice, but of course you can also eat it with warm flatbread and tahina, very delicious!
Rice with vegetables and chicken breast
Ingredients:
short-grain rice
chicken broth
vegetables (peppers, broccoli, tomatoes, green beans …)
Onions
Salt, pepper and curry

Heat a little olive oil in a pan, add the rice and the curry powder, and lightly toast everything. Then pour in plenty of chicken stock. Let the rice cook. If there is too little liquid, top it up with water. In the meantime, cut the chicken breast into small strips, and clean the vegetables and also cut them into small pieces. Fry the chicken breast and season generously with salt and pepper, then add the onions and vegetables and cook until al dente. When the rice has absorbed the liquid, add the chicken breast and vegetables, stir everything together and heat through briefly. Done!
Puff pastry with chicken breast
A light and very tasty dish

Cheese for topping (mature Gouda)
Dice the chicken breast and fry over a high heat, then season well. Add the chopped tomatoes, peppers and onions, and finally crack in an egg and fry it along with the rest.
Fill the whole thing into the puff pastry and sprinkle with a strongly flavoured cheese (Gibna Rumi is used here, which is salty and spicy). Put it in the oven and, after a short cooking time, slice and serve.
Mixed vegetables + minced meat with curry
Ingredients:
Fresh vegetables (courgettes, potatoes, sweet potatoes, green beans, peppers, carrots …)

First you need to fry the minced meat briskly with the finely chopped onions, once that is done you can set the minced meat aside for now. Wash, peel and cut the vegetables into equally sized pieces. Briefly fry the vegetables in the pan with the curry powder, then pour in the liquid and simmer until the vegetables are tender yet firm. Then add the minced meat, mix together, heat through briefly and the dish is ready.
Baked peppers
Ingredients:
Peppers (green, yellow, red)
Salt
Pepper
Olive oil
Filling? (Minced meat)
Wash the peppers, cut off the top (do not throw it away, it will still be needed as a lid) to remove the seeds and core. If you like, you can of course also stuff the peppers—minced meat is great for this, for example—or you can simply leave them unstuffed.
Then place on a baking tray, season with salt and pepper, and drizzle with olive oil. Put in the oven for 20 minutes and ready to serve!
Rice goes well with that, of course, and perhaps tahini as a dipping sauce?!
Pizza
Ingredients:
400g flour
260ml milk
2 tbsp oil
Salt
4 tsp baking powder
Tomatoes
Paprika
Mozzarella
Mix the milk, oil and salt in a bowl. Combine the flour and baking powder in a separate bowl, then gradually add the milk mixture to the flour. The dough does not need to rest and can be rolled out straight away. Spread a little tomato purée or tomato sauce onto the pizza. Top with pieces of tomato and pepper, season with pepper, and then sprinkle the pizza with mozzarella and a mature cheese.
Bake in the preheated oven for 10 minutes.
Baba Ganoush
An aubergine paste with a hint of garlic.
Ingredients:
Aubergines
Sesame paste (Tahini)
Garlic
Lemon juice
Salt
Pepper
Wash the aubergines and pierce the skin. Then place the aubergines in the oven and cook. When the aubergines are done, take them out of the oven and leave them to cool first. The skin can then be removed very easily. After peeling, mash the aubergines to form an aubergine purée. Mix with sesame paste (tahini) and lemon juice, and add crushed garlic to taste. Season with salt and pepper and drizzle with olive oil.
Serve with flatbread, meat, vegetables or fish (grilled or fried), it goes with everything.
Tahini
Tahini is a sesame paste that is already available to buy ready-made in shops in Germany too. However, anyone who wants to make the paste themselves does not need many ingredients, just a little time.
Ingredients:
Sesame seeds
Salt
Olive oil
Lemon juice
The sesame seeds must be roasted in a pan, without oil, stirring constantly. Then leave to cool. Blend in a blender, cool, blend, cool, until the oil comes out of the sesame seeds. Then mix the paste with olive oil and lemon juice until the paste gets a creamy consistency. Season with salt and pepper and the basic paste is ready. Mix the finished paste with natural yoghurt and finely chopped garlic, season to taste and that is it.
You can actually eat tahina with everything. It tastes especially good with fish.
Foul
arguably the most well-known Egyptian dish
Ingredients:
broad beans
sunflower oil
Onions
Garlic
Chilli
tomato puree
Tomatoes
cumin, salt, pepper
Ful consists mainly of broad beans, either canned or dried. Dried beans must be soaked in water for at least 12 hours.
Put the beans in a saucepan and simmer them over a low heat with a little liquid until they are soft and easily mashed. In the meantime, heat oil in a pan and fry the chopped onion in it first. Then add the garlic and chilli and fry them too. Mix in the tomato purée and cumin. Add the puréed or chopped tomatoes and simmer over a low heat. Finally, add the beans and leave to simmer on a low heat until everything is well combined and has the right consistency for you. Season with salt and pepper and your foul is ready.
Falafel
Ingredients:
250 g chickpeas (not from a tin!)
1 bunch of parsley, roughly chopped
1 onion, quartered
2 ½ teaspoons of baking powder
70 ml of water
3 tablespoons of flour
2 cloves of garlic
1 tablespoon of ground cumin
½ tablespoon of turmeric
2 knife tips of chilli powder
1 tablespoon of salt
Method:
Soak the chickpeas in water for at least 12 to 14 hours. Rinse them in between! Then drain through a sieve and leave to dry thoroughly. Purée the chickpeas, garlic, parsley, onion, baking powder and spices, preferably not too finely. You can also refine them with other spices, just as you like. You can also add chopped tomatoes, for example. Finally, add the water and flour and mix everything thoroughly. Form small balls with slightly moistened hands and fry them in oil heated to about 180 degrees. Ready!
Of course, other treats can be served with this, or you can make flatbread with sauce, salad and falafel.
mashed potato
Ingredients:
Potatoes
Garlic
Salt, pepper, coriander
caraway
Milk
Peel the potatoes, wash them, cut them into pieces, wash them again and then boil them (don't forget the salt). When the potato pieces are cooked, drain them in a sieve and set them aside for now. Bring the milk to the boil, mash the potatoes and season with garlic, salt, pepper, coriander and caraway. Then mix the mashed potatoes with the milk, maybe add a bit of butter as well, however you like it.
Potato salad
Potato salad is simply always delicious!
Ingredients:
Potatoes
cucumber
Mayonnaise
Yoghurt
Salt, pepper & marjoram
Boil jacket potatoes until tender, leave to cool slightly, then peel and slice. Peel the cucumber and cut into small pieces, add a little salt to the cucumbers and leave to infuse for 10 minutes. Mix the mayonnaise, yoghurt and seasonings, feel free to use more salt as the potatoes absorb a lot of salt. Then add the potatoes and cucumbers and mix well.
The potato salad can be eaten warm or cold.
Tomato salad with cheese and tahini
There really are many ways to serve tomatoes and there are no limits to your creativity. So just try this way of making tomato salad.
Ingredients:
Tomatoes
Grated cheese (that depends entirely on your taste, anything is allowed from mild feta to mature gouda)
Onions
Oil and vinegar as well as salt and pepper
Tahini
Wash the tomatoes, remove the stalk beforehand and slice them. Mix the dressing together with very finely chopped onions, olive oil, vinegar, salt and pepper, and drizzle it over the tomatoes. Sprinkle the grated cheese of your choice over the salad and garnish the whole salad with the tahini sauce. Enjoy your meal!
Carrot salad with yoghurt (coleslaw)
A tasty salad for in between meals
Very quick and easy to prepare, perfect for barbecuing.
Grate the carrots and mix them with a few drops of olive oil.
Finely shred the white cabbage and mix with the carrots.
For the dressing you need yoghurt, sugar, salt, pepper and a little mayonnaise.
Simply mix everything together and the delicious side salad is ready.
Beetroot salad (á la Josh)
Very simple, yet super tasty and so healthy!
Ingredients:
beetroot
Onions
Salt
Pepper
Sugar
Vinegar
Oil
some lemon juice
Beetroot, brushed but unpeeled (just cut off the stalk), into a pan of cold water so that the beetroot is well covered with water. Put the lid on and bring to the boil. Then simmer without the lid over a low heat for 30 minutes. Then (remember to wear gloves so your hands don't go red) let the bulbs cool down briefly and simply peel off the skin. Slice, mix with the sliced onions. Season to taste with salt, pepper and vinegar and add a small pinch of sugar.
Leave the beetroot salad to infuse for another hour and then tuck in.
Cinnamon nut cake
Ingredients:
400 g sugar
250 g margarine or butter
5 eggs
400 g flour
1 sachet of vanilla sugar
1 sachet of baking powder
some milk
Cinnamon
ground nuts (almonds, hazelnuts, whatever you prefer)
In a bowl, beat the sugar and margarine until smooth, then add the eggs, flour, baking powder and vanilla sugar, and mix until the batter becomes nice and fluffy. Grease a baking tin, then spread half of the batter in it.
Mix the remaining dough with cinnamon and nuts and then pour the second half of the dough into the baking tin.
Bake at 180 degrees for approx. 50 minutes (conventional heat).
Salabia
Ingredients:
1 kg flour
2 sachets of vanilla sugar
1 sachet of dried yeast
All of this is mixed with water to form a relatively runny batter. Put a lid on, wrap the whole thing in foil and chill. (Original from the boat crew). Two hours before preparation, put in a warm place. Heat fat in a pan and drop the mixture into the pan using a teaspoon. Finally, top with icing sugar or honey, and it's done!
